Mixed vegetables raita recipe for biryani

Raita is an indian salad dressed with thick yogurt . Mixed vegetable raita goes well with Mint pulao, vegetable pulao, peas pulao, vegetable biriyani, bisibelabath, tomato rice, brinjal rice and most mixed rice recipes. I love to have it with roti/chapati, paratha, sometimes as such without any accompaniments.
Ingredients
- 1 1/2 cup yogurt (dahi)
- 1/2 cucumber (Kheera)
- 1 medium sized onion, finely chopped
- 1 medium sized tomato, finely chopped
- 1/2 t-spoon roasted ground cumin (Jeera)
- green chilly, finely chopped
- 1/4 t-spoon black pepper
- 1/2 t-spoon salt
- 3/4 cup water
- Chopped coriander leaves
Preparation Method
- Firstly peel the cucumber and chop it into small pieces (cubes).
- Take a medium sized bowl and add yogurt to it. Mash it with a hand blender until it gets smooth. Add water and add given ingredients (except cucumber, onion, tomato) and again mix them well.
- Now add cucumber, onion and tomato to it and mix it again. Refrigerate biryani raita for 1/2 hour
- Before serving, garnish biryani raita with finely chopped coriander leaves and serve chilled.
