Mixed vegetables raita recipe for biryani

Raita is an indian salad dressed with thick yogurt . Mixed vegetable raita goes well with Mint pulao, vegetable pulao, peas pulao, vegetable biriyani, bisibelabath, tomato rice, brinjal rice and most mixed rice recipes. I love to have it with roti/chapati, paratha, sometimes as such without any accompaniments.

Ingredients

  • 1 1/2 cup yogurt (dahi)
  • 1/2 cucumber (Kheera)
  • 1 medium sized onion, finely chopped
  • 1 medium sized tomato, finely chopped
  • 1/2 t-spoon roasted ground cumin (Jeera)
  • green chilly, finely chopped
  • 1/4 t-spoon black pepper
  • 1/2 t-spoon salt
  • 3/4 cup water
  • Chopped coriander leaves

Preparation Method

  1. Firstly peel the cucumber and chop it into small pieces (cubes).
  2. Take a medium sized bowl and add yogurt to it. Mash it with a hand blender until it gets smooth. Add water and add given ingredients (except cucumber, onion, tomato) and again mix them well.
  3. Now add cucumber, onion and tomato to it and mix it again.  Refrigerate biryani raita for 1/2 hour
  4. Before serving, garnish biryani raita with finely chopped coriander leaves and serve chilled.
